The Amalfi coast is one of the
most beautiful places on earth, but you can read such comments in any travel guide. Instead we would like to share something
with you that you won't find in any guidebook-a recipe for delicious limoncello.
Limoncello First peel 10 - 15 lemons. Use only the yellow of the skin - any of the white
rind will infuse bitterness. Soak them in just over 2 pints pure alcohol (vodka works well) for 40 days. Filter
and mix the resulting liquid with just over 3 pints water and 2.2 lbs sugar. Bring to the boil to completely melt sugar,
then allow to cool completely. Add an additional 2 pints of 100 proof Vodka and then leave for up to 40 more days. Strain through unbleached paper coffee filters before bottling. Serve chilled. This will keep in the refrigerator
for several weeks or in the freezer for months. Salute!
